Learning Processing of Deferred Activities

Hi,
I have seen so many issues in different OEOL and REQAPPRV and POAPPRV workflows in my organization recently (Item types of some business critical workflow approvals defined in EBS, you may already be know much more about them, silly me). I have little idea about workflow development but not very friendly with logic of processing of deferred activities.

Can you please share with me some knowledge, a document or link which will help me in learning and getting some information about processing of deferred activities.
