Change the PERSON and EMAIL assigned to SYSADMIN

Concerning the SYSADMIN user

The PERSON and EMAIL assigned to SYSADMIN are still assigned to a consultant  who is no longer with us.

I am trying to change the PERSON and email associated with "SYSADMIN" to a generic user like: APPS DBA  with a generic email appsdba@ouremailaddress.com

The Workflow Administrator role is set to SYSADMIN, and all of the WFERROR's are being sent to the consultants diabled exchange account.

We are trying to update this Person and EMAIL so that it goes to an active account for viewing the WFERROR notifications.

I want to change the PERSON and EMAIL assigned to the USER_NAME SYSADMIN as seen in the SECURITY >DEFINE> USERS screen.
