MTP Upgrade pass. New Tax Updates in production copy. Need new record structures.

We have read the new method for upgrading with Tax Updates and the documentation instructs us to not apply Tax Updates to our upgrade source, but carry forward field and record changes to the HCM 9.2 Demo as a customization.  This works fine for the Initial Pass, but what are we supposed to do on the MTP when more new Tax Updates are now in the new copy of production that we want to upgrade?   I would assume we need to get the new record structures into our Upgrade Source, but not sure how to do this without apply the
