remove the Menu icon from selected applets in Open UI

In Open UI ...

Is there any way to remove the Menu button completely from selected applets? or does our change affect every applet using that web template? What is the best way to do both? If I edit the swt file it will effect all applets based on that swt file across the application which is not what we want.

Also, is it possible to create a hovering horizontal bar at the top of the page that always shows the value of some profile attributes - even when the user scrolls to to the bottom of the page (e.g. Customer or Account Name)? This way the user always knows which contact or account they are looking at.
