PeopleSoft HCM 9.1 to 9.2 Upgrade Questions

Greetings All,

We're currently on PeopleSoft HCM 9.1 and PT 8.53 looking to upgrade to 9.2 and 8.55.

We are using Microsoft SQL Server as our database and Windows as our OS.

There is a ton of information out there but it can sometimes be disjointed and hard to follow. We have a number of questions about the upgrade process and were hoping to get some help.

As part of the upgrade we are migrating to new servers.  It looks like we can use the Upgrade Source Image to create the new DEMO environment but then says to take a copy of Production to use as your Target environment for the Initial Pass.
