Trigger a process task when a process form field is changed

As the title says, i'm looking to find out what the best way to trigger a process task when a form field changes.

I have a custom resource where roles are being used to populate process form fields.  What is the best way to  trigger a UD_PROCESSFORM Updated process task if the form field changes?
