Pre-Enabling Workflow steps

Hi,

We are in the process of enabling the workflow, we have all the credentials and setups to enable the workflow but our concern is that we need to fully understand the workflow tables and how they are working and syncing together to prevent sending any email.

1- After some researches we could not locate some "ORIG_SYSTEM" values in the table WF_LOCAL_ROLES, is there any document mentioning all the source values of this field in this table ? and from which module ?

2- What is the best practice to prevent any email from being sent after enabling the workflow ? as it is a critical matter to us and it is not acceptable to send any email accidentally.
