PeopleSoft AWE equivalent of Activity field mapping (Recipient and CC email)

Hello

In a peoplesoft traditional workflow, the email definition on an activity has mapping for "TO", "FROM", "SUBJECT", "NOTETEXT" etc. and  we then map to the respective work fields.

The "TO" (recipient) doesn't have to be an email from User profiles page. Programmatically, we can get the email from other tables and then assign on the Email mapping for "TO".

How do we achieve the same functionality in AWE ?
