Creating another version of the modified Change Package after C.A. script job is closed?

I'm wondering how to modify a change package a second time (the first time happened at the end of the Initial Pass ).  Reapplying customizations take weeks to do and I don't intend to leave my Change Assistant job open for that long. 

Once customizations are re-applied, how do I ensure they are included in the modified *.zip file in the Download directory before beginning my Move to (copy of) Production ? 

 

The documentation says "For change packages defined using PeopleSoft Update Manager PIA application, the change packager is invoked automatically by Change Assistant when you select to apply the change package."
