How-to Start Dunning process with a cut-off date

Is it possible to start the dunning process with a cut-off date? In order to select only delinquent transactions from a specific date onwards and not retrospective.

Purpose of this goal is that we want to use dunning and implement a very strong credit management policy which will involve service cancellation or account blocking but to also allow our customers where to have many past due invoices going beyond 1 year and if we implement and configure new policy it will cancel or block half of our portfolio.
