Issue with Strategy management process

I would need your advice to provide a solution for below business scenario.
Business Scenario: Our client has 3 types’ customers as below.
- Green-Simple collection process
- Amber-Moderate Collection process
- Red- Hard collection process
So, we defined 3 strategies as aforesaid and Green strategy has the following work items.
- Dunning Reminder 1—This reminder will go on the day when strategy assigns to customer
- Phone Call—This will be done by user after 2 days of sending the Dunning Reminder 1
- Dunning Reminder 2—This reminder will go the 5th day of completing the phone call (2nd work item)
We do run strategy management process on every Monday at 5PM CET. So the 1
