How to Change the Send From Email Address for AP_EMAIL_ADV for Payment Notification

I am testing using the delivered AP_EMAIL_ADV AE for our supplier payment pay cycle to notify suppliers of EFT payments.  Delivered, the email send address references mail_server@company.com.  How do I change that to reference our company?  Where is the configuration navigation to do so?  Also where can I change the test in the body of the email notification?  Thank you!
