Advanced Collections Tasks - how to

I have three business needs and I hope to get some help here related to Tasks form on Advanced Collections. Screenshots for points one and two attached.

  1. I have profile option 'IEU: Desktop: UI: Show Work Panel' set to YES. When I click on Tasks > My owned sub node, work panel shows at the bottom half on the bottom left side I can see three note types. It is a drop down LOV. How do I get it to default to 'Notes : Task Notes'. It only makes sense that when I open My Tasks that it show me notes on the task and not Customer notes or Contact notes which it defaults to today. Are these values stored in a Lookup or is there a
