When I choose a repository variable and choose to display all columns, how can I assign a specific value to "All Columns" so that calling that variable will display the word "Total" instead? Thank you

Your question is very vague. Please be more specific about your use case. Also please be more precise with the version. "12c" doesn't mean much as there were more than 30 "12c"s over the lifetime of this family.
Lastly: OBIEE "12c" is outdated and has been superseded by OAS 5.5 in 2020, OAS 5.9 in 2021 and OAS 6.4 in 2022.
