How to create a Journey to Employees as reminder to complete Race/Ethnicity details

Hello

We have a requirement to setup journey as a reminder to colleagues who have not self-reported Race/Ethnicity information in Me > Personal Details > Demographic Information. The requirement is to set bi-weekly reminder if not completed and once reported by Employee the remider should stop and the system must check for batch of Employee who are yet to self-report Race and Ethnicity.

I would like to know what category to be selected while creating checklist and is this even possible to accomplish.
