Can an eSignature Journey Task be saved without a document attached?

Summary:

Client requests to have a link that directs employees to view documents outside of the system to their intranet (example: to review the employee handbook) and once reviewed, the employee goes back into the journey task to sign off using the eSignature task. Then they want the system to store that eSignature into their document records for later review. The reason the client wants to use a link to their intranet instead of attaching the document to the task is because they would need to update the same documents twice which seems redundant (Once in the intranet and one more
