Reassign Task to New Hire?

How do I reassign a task to a new hire?

I have a Recruiter that disagreed with system functionality and reassigned an onboarding task from a new hire to an employee.  The problem I am running into in trying to reassign it back to the new hire is that when I click reassign, our selector list only contains employees.

Has anyone encountered a situation where they need to reassign a task to a new hire and, if so, can you please share that knowledge?

EDIT - Or, maybe can I cancel and restart the specific task and that action will default the original assignee back into place?  That would be awesome!
