Veteran Status Picklist

Taleo Delivered Voluntary Self ID form allows for inconsistent responses.Content
We are configuring the Career Center. As we were testing, we discovered that on the voluntary information page the Veteran status question is set to allow for multiple responses (which contradict one another). Our consultant has told us that this cannot be swapped out for a custom field. Is there an explanation as to why this field is a picklist multiple vs picklist? Can this be changed to a standard picklist?
How has anyone else addressed this?
