Performance Document Routing to Manager's Manager

Here's the example scenario:
We assign/create the performance documents to all employees on 11/1/2020. Employee A completes performance document. Performance Document is sent to Manager A and he submits for approval to his Manager (Manager .
We have a reorg on 12/1/2020.Employee A is now under Manager C and the performance document was sent to Manager D to approve. We need to have Manager B assigned to the performance document for approval.
My question: Is there a rule we can put in place to have the hierarchy of the manager approvals frozen at the time of creation of performance documents. If not, is there a way to accomplish this?
