We are not able to change an approver in the Expense Report workflow. When we pick a name from the list of values when attempting to change the approver, the email address doesn't fill in so we have to type the email address. Here is what we did:

Tools>Transaction Console>Approval Rules>Expense Approval and clicked the pencil

Entered "exp" in the search field and clicked to select "FinExmWorkflowExpenseApproval". The details of the approval appeared. We clicked on the Assignees button and then the Finance Approver action. This brought up the details of the Finance Approver, where we had the assignees as a user with the user's email address. We browsed for the new user and selected them, however, their email address doesn't populate the email address window, so we had to type it in.
