Fast formula for coverage start date

We need to create a fast formula for rate and coverage start dates to be '1st of the month after next' or something similar

I'm not a fast formula expert but hoping someone might be able to help. We plan to open a benefit window 7th - 25th March allowing people to buy annual leave. However we need the rate and coverage start date to begin on 1 May 2022.
Is this easy to do and does anyone have similar fast formula they could share?
