How to send Reminder Emails with Custom Email Templates

Summary:

We want to send a reminder notification to users if status remains as 'Approval Pending' after every 2 days.

We tried to achieve this using Execution Schedule under Object Workflows - but the issue which we faced is that even if the status got changed from 'Approval Pending' to 'Approved' in 1 days itself but then too email was triggered to user at scheduled time (i.e after 2 days).

Kindly suggest any alternate solution that can be implemented in order to achieve this requirement
