Change "From Address" in Workflow of Entity

Summary:

We need to change the default email that appear when using the Workflow Email Notification and use a custom one.

Ive been watching the documentation about this and what we see is different.

We cant see the "From Address" label to change it.

I also try to modify the page with the "Page Composer" to see if that label was hidden but i couldnt modify how the page look.
