How can we send out Standard Alerts for Anytime Documents

Summary:

We are looking to send out notifications after an anytime document has been open for 7 days. The issue is that it seems that the Standard and Critical alert days are based on days until due date, but since we are dealing with an Anytime doc, we are unable to set a due date.

How can we make this happen?
