Approval Action - Renew Button purpose

Renew button under Invoice action has purpose - "Give yourself more time (seven days is the default) to act on the task, if the task is about to expire."

Can you please confirm which config controls the 7 days? Also, after completion of 7 days, will task automatically escalate as per escalation period set?
