How to Update to and from email addresses on Checklist alerts?

We've followed all the steps on this Help Doc: to update the From Email address from etrb.fa.sender@workflow.email.us-phoenix-1.ocs.oraclecloud.com to be our office's email address. However, the alert emails are still showing as the etrb address? What are we missing? Is there something not on the Help Doc that we need to do?
