Report to Show the "Send Receipt Email" Being Sent

Hi Everyone!  

I am looking for a way to report on the "Send Receipt Email" being sent for one of our clients.  I have checked in the canned reports, the online KB and this discussion forum and I can't find any info on this. 

Below is my scenario, I would really appreciate anyone's ideas!!

We have a business rule set up to automatically send the Receipt email out for all incoming emails.  We have configured a dynamic message for different groups of customers which is actively being sent - we've tested several times.  

I am now being asked basically to prove that the receipt email is actually going out for a specific client.  They are looking for a monthly email to show when the email is received from the customer and when the receipt email is sent.
