Past records cannot be changed from HR -Processing in progress to HR -Processed status

We have a 500+ cases where the state of the job application is HR-Processing in progress status. The data is from 2021 and now we have huge number where application are not in processed status and job requisition is filled. We are in process of purging candidates data as per the GDPR policy and we are stuck at it as the status which is being expected in the job application is to be in processed status in order to maintain data integrity. Candidates are already hired and job requisition is filled.
.We tried to run complete the recruiting process and nothing changes and state still shows HR processing in progress status . Could you please let me know what could be done.
