How can I delete Employee rating name from the Performance document section?

Summary:

We have tried to Hide the Rating names using page composer and we were able to do it with Manager rating names. But when I try to hide Employee rating names, it is disabling whole ratings along with calculating ratings instead of just rating names. We need calculated ratings to display.

Can anyone please suggest?
