26A Redwood: How to Default Email Channel and Inbox

Hello all,
We are currently designing and testing the new Redwood Help Desk. Our business partners requested a change that I am not fully sure can be done. We would like to default the email channel and default the "HR Help Desk Mailbox" option while making the channel and inbox read only.
Another possible route would be to hide the "Help Desk" option from the drop down.
Can either of these two options be done? Please see the screenshot below.
