Not sure I would call it a best practice, but I normally do one of two things to resolve. Write down the path of the account specific value in the XML. Then delete that tag. As part of my deployment to production, I make a checklist of fields to by hand defaulted via GUI interface. Yes, a pain, but four or 5 manual updates…
