How do I set-up/create a dunning plans and how can i check if they are working

I've been looking for ways to set up dunning plans, as I'm looking into changing the Collections Method

from Strategies over to Dunning Plans; however, I have not been able to locate updated details on how to set up/create a Dunning plan.

I've looked in the community and found this old post

However, it doesn't give too much insight into what changing over to a dunning plan means.
