Blank column w/ title on saved search?

I've put together a saved search of items past due or due within 7 days, to be auto-emailed to vendors each week for update. I do not want the vendors to type over our system ETA, since it won't be readily apparent on return which lines were updated. I'd prefer to have a specific column for them to enter new info in. .

I'm hoping to get a blank column that I've titled "New Delivery Date". Any way to do this? I've considered that I can choose an existing field that we aren't using and has no results, but this runs the risk that in 2, 3, 4 years we suddenly start using the field and everything has to be fixed. Or I could make a new dummy field hidden in the item record, but my preference would definitely be to just be able to get a titled, blank column without adding more fields.
