How to override the Estimate Price in Service Logistics

Summary:

We would like to override the Price in the Service Logistics under Manage Charges and Estimates UI.

Content (required):

We have a requirement to override the Estimates based on Customer Interaction. However, as per the current UI functionality, I don't see an option override the price neither from Add/Edit Estimates Window nor by clicking on the Amount (Your Price is also not editable).

Please suggest, how to modify the Estimate Amount ?
