Customize Document Records Embedded Application Task

I am using a task from Document Records in a journey, and visually it looks strange because a lot of information is displayed. I would like to customize it to lock a specific document type in the task and not allow the user to change it (Print 3), instead of the user clicking add and selecting the document type (Print 2). Also, I want to remove the additional fields that appeared with the Redwood update of Document Records (Print 4) and not show the history of the user's existing records (Print 5) in the Journey task.

Does anyone know if it is possible to make all these customizations in the embedded Document Records task? According to my research, it is still not possible to directly customize the Document Records screens, but I would like to know if the embedded task allows some of these customizations or if anyone has managed to do something similar, as this visual does not look good on the screen for users.
