List View Display - criteria or work around

I have noticed problems showing typically three or more columns of information on a list.  Other times, I can get four or five.  I can't seem to figure out the rhyme or reason behind this.  Anyone know.

For example:

I want to show:

column           column                           column
Company        name of contact              Last Date Contacted (custom field)

Only the first two columns will show.
