Set Sales Order Fields based on Shipping Method

I am trying to set a few custom fields (Freight Code, EDI_W6602 and SCAC) on a Sales Order based upon the Shipping Method (Shipping Item) chosen.

For example, Ship Methods A, D, F and G will have Freight Code = 10, Ship Methods B, C, E and H will have Freight Code = 20, etc.

I thought I could just add Custom Fields to the Shipping Items record (like I would to Customer record to set Sales Order fields based on the Customer chosen) but apparently Shipping Items can't have custom fields.

I thought I could create a custom record with Shipping Items as "key" with their associated Freight Code, EDI_W6602 and SCAC.
