Activating Advanced Templates

I've created a Sales Order using "Advanced PDF/HTML Templates"

I've set the "preferred" checkbox but nothing changes. When I go to a sales order and print it, it still uses the previous template.

How do I set sales orders to use my template? Also, what does the preferred checkbox do?
