Sharing Model - Security?

We often have tasks/events with titles/subjects which can be internally sensitive, things like;

"Discuss pay review for Staff A with Staff B"
"Meet with staff A about poor sales performance"
"Staff A is again not dressed correctly for work"
"Meet with staff B to discuss stratergy for dealing with staff A"
"Staff C has come to work wearing a Clown Nose for the 3rd time"
"Meet with Staff Z and give final warning" etc

The problem is that when I go to customise the roles thinking I will restrict tasks views to "self" or maybe "group" instead the only option I have is Full,Create,View,None.
