Mass Updates performance on system

Hi there

What's the affect of running a mass update during business hours? Does it potentially slow down the experience for other users logged into the account?

I need to update every sales order (over 200k) with a custom field that sources it's own Sales Order number.

I have a mass update that adds the SO number to the SO for every SO and Cash sale for the day. But I also need to update historical records (200k worth of them). There's already a lot of scheduled daily mass updates that presumably run at night (mass update schedule doesn't let you define a time??).
