Can you create additional out-of-stock behaviors for the webstore?

Basically what we are trying to do, is mark something (out of stock) on the webstore even when we still have inventory left. The reason for this is: We want to stop selling particular seasonal items when extremely low on stock before we run out.

From what I can tell, the only way you can do this natively in Netsuite is by "not displaying" the item on the website all together.

But...I still want to display on website because I would rather not break my internal links and google links to that item page would be broken as well. I would also still like show people that we did carry it.
