Assigning Classes to Customers for use as default on Sales Orders

I am interested if anyone has managed to assign Classes to Customer Records. We are planning to use Classes to drive P/L reporting and want to automatically default Class on trx based upon a "Class" field on the customer record.

So far I have been unable to link the Classes record directly or via a custom entity field.

Can anyone direct me on how to do this through the interface?
