Change the order of Items in dropdown

I am hoping to modify the order of the Item list when opportunites and Invoices are being created.  I didn't find anything in the forum on this or in the support sections. 

I tried putting letters in front of some items but so far can't seem to see a rhyme or reason for how they appear.

Please assist.
