M Blanc - Changing a custom field on an so line item at checkout

We're trying to create a user input within the item details pages that will update a field on the sales order line item once the sales order is submitted at checkout. I've been snooping around the LiveOrder module trying to find a way to do this without any success so far, has anyone done something like this?
