Remove the ability to add NEW values to a field

All,

     I have a few list fields that are offering my agents the ability to add new values to it (e.g. "New" shows up with the values, giving them the ability to add values to the field). Does anyone no off-hand what permissions I would be looking at changing here? Thanks in advance, you guys are great!
