PayPal and PayPal Express Checkout
You probably know this but just in case and to save you the pain I experienced about 2 years ago...
1) With both PayPal and PayPal Express Checkout, the transaction may or many not be covered by PayPal Seller Protection. The only way to know is to log into the PayPal.com and look at the specific transaction. It will say "PayPal Seller Protection" Eligible or Ineligible.
2) If the transaction is Eligible and the total sale is over $250, you must send that order with "signature required". If you do not send it signature required, you are NOT covered by PayPal Seller Protection. This makes some customers very angry and indignant. "Why I have never had to do this with all of my PayPal purchases..." Ma'am, Sir -- I will be pleased to send you the PayPal document which clearly explains this point...
