I Need help with a workflow

I am trying to setup a workflow that will send an email to a user in our webstore when they create a quote in SCS.  I want the email to be from me (got that part) to the user on the website.  I cant figure out what the correct field is to draw the email address from.  Some of the users will be logged in from the csutomers primary email address and some of them will be logged in through a specific contacts email address.

Appreciate any help you can lend.
