Disable default from item fields to PO line

Hi All,

I'm working on a workflow that updates the field class when I'm editing the field item, the class should be the same as the class in the header.

when I'm finished editing I see that the workflow works but then the system populates the fields with the default values of the item.

is there any option I can turn it off for several fields or all the fields?
