Why do Datasets get removed from the option list when I select 'Simple Table' in Workbooks?

I have created two datasets in a workbook and linked them together. Now, I have created pivot tables, and they are working fine. However, when I attempt to add a column from one dataset, the other dataset gets removed from the option list when I select 'Simple Table' from the options.
