How to send email to a custom Email address?

We have lot of complaints from accounts offices who do not want to receive order confirmations nor fulfilment notifications so I thought I would try to use Work Flow to send those documents elsewhere.

I have created a custom email field "Buyers Email"



However when I try to set a "Workflow Action" and select State = "Send Email" I have the option to select a Recipient "From Field" "Current Record" but under the dynamic drop down "Buyers Email" is not an option:-



How do I get around this?
